Every veteran baker knows that the hardest part of holiday baking isn’t the baking at all; it’s getting to your destination with your cookies and sanity intact. I spend hours rolling dough, cutting neat edges, cooling my bakes, carefully tapping sprinkles — and then I fight against fate to not destroy half my work in transit. Every December I vow this will never happen again, and every December I forget I’ve learned this lesson before.I wrote a whole book on the art of bringing things, so I feel a particular pressure this year to appear very pulled together. Don’t worry, I’m done complaining, and now I’ll tell you the very simple solution: pizza boxes. I learned this trick from my friend Jess Damuck, a cookbook author and food stylist, who was styling a shoot and got a lot of very intricate desserts to set in one piece. I bought a set of pizza boxes the next week and never looked back. They’re the best way to transport cookies, bars, brownies — anything delicate that needs to move from point A to point B with care.

I used to own a couple of giant Tupperwares that were somehow always the wrong shape but excellent at jostling everything around and ruining my hard work. I’ve tried balancing flimsy aluminum trays on my knees in the back of a cab and watched them fold under pressure — literally. Pizza boxes have solved all my problems. They’re lightweight but rigid enough to protect your cookies. The perfect 90-degree angles mean no sloping sides and everything can lie flat on the bottom. A sheet of parchment underneath keeps cookies from sliding around, and another sheet on top makes a tidy second tier for stacking. Plus there’s plenty of room, so nothing has to touch if you’ve carefully decorated your treats. And I can either leave the box behind at the end of the night or pack it up again with all the treats I’m bringing home. That’s what we call a win-win.
