Once my economical protein choice for breakfast, lunch, or sometimes even dinner, eggs are suddenly feeling like a luxury. It was not so long ago that just five or so minutes in boiling water and then an ice plunge yielded my favorite humble-yet-satisfying dish best served over a bed of greens, in a grain bowl, or perched upright in an egg cup. Now, you can barely find a carton of eggs at the grocery store — and if you do, they’re way more expensive than they used to be. I dream of days when egg prices drop and I canbakewith abandon. When I can serve a plate of carbonara to friends. When I can simply savortwosoft-boiled eggs.
Some say soft-boiled eggs were first consumed in Ancient Rome as a delicacy. Wheneggsare back in stock at my local Whole Foods, I will treat them as such. And so, I will give themegg cups. Imagine diving spoon first into the rich, golden yolk of an egg, held in place by a speckled-ceramic, glazed-terracotta, or all-aluminum base. Pure delight. I’ve found 12 egg cups for when I can actually buy eggs again.
