I reach for this eight-inch chef’s knife more than any in my vast collection — and right now it’s a whopping 56 percent off. (The six-inch and nine-and-a-half-inch versions are also on sale.) Its weight — on the lighter side for this standard length — feels great in my hand. It offers solid control for heftier tasks like carving a chicken, but can still tackle delicate moves, too, like cutting florets out of a head of broccoli or slicing through a tomato without becoming unwieldy. The handle is on the slightly shorter side, which helps with control, too, and it’s balanced from top to bottom. Several pros are fans, as well, including Smitten Kitchen’s Deb Perelman, who says it’s very sharp and holds its edge well.
